made using fresh ingredients that are in good

Egg, Bacon & Tomato Salad Recipe
Cooking Time: 20 minutes
1. Fry 5 rashers of good quality bacon in a dash of
olive oil until crispy, pat dry on a kitchen towel
and cut into bite-sized pieces.
2. Whisk 2 tablespoons of olive oil and 1 tablespoon
of balsamic vinegar in a bowl with a little
seasoning to make the dressing.
3. Arrange 1 bag of prepared salad leaves on a
serving dish or separate plates.
4. Arrange the bacon, 6 sliced cherry tomatoes,
croutons and onion rings over the salad leaves and
drizzle with the dressing.
5. Top with hot poached sliced eggs and serve
