1. Select a small shin of beef of moderate size, crack the bone in small pieces, wash and place it in a large pot to boil, with five or six cups of cold water. Let it boil about two hours, or until it begins to get tender, then season it with a tablespoon of salt, and 2 teaspoons of pepper.

2. Boil it one hour longer, then add to it three carrots, two turnips, two tablespoons of rice or pearl barley, one head of celery, and a teaspoon of summer savory. The vegetables should be cut small like dice.

3. After these ingredients have boiled a quarter of an hour, put in two potatoes cut up into small pieces, let it boil half an hour longer.

4. Take the meat from the soup, and if intended to be served with it, take out the bones and lay it closely and neatly on a dish, and garnish with sprigs of parsley. Serve mustard with it. It is very nice pressed and eaten cold with mustard and vinegar, or catsup.

What to do with leftovers?

Should any soup remain left over on the first day, it may be heated, with the addition of a little boiling water, and served again. Some fancy a glass of brown sherry added just before being served. Serve it very hot!

Tips for making low fat healthy soup recipes

Clear consommés may be used, and stock from vegetables and meat bones. Thoroughly chill and remove all fat before using. Cream soups made from non-fat milk, with the addition of flour (2 teaspoons to 1 cup) thoroughly cooked until thick, then blended with various vegetables or vegetable purees, are excellent. To replace crackers you may use Melba toast, toast cubes, Ry-Krisp, or bread sticks.

Eating canned soups

Dry soup mixes are quite low in fat and are very enjoyable. Some soup manufacturers prepare canned soups that have about a half-teaspoonful of fat per serving of soup when diluted equally with water.  Vegetable and vegetable-beef canned soups, however, are very low in fat content and great for the low fat diet.
