The raw food diet involves eating unprocessed, uncooked, organic, whole foods, such as fruits, vegetables, nuts, seeds, legumes, dried fruits, seaweeds, etc. It means a diet that is at least 75% uncooked!

Good Raw Foods to Eat

  • Fruits, vegetable and nuts.

  • Cabbage – High in Vitamin C; important for healthy cell function.

  • Edible flowers, rose petals johnny-jump-up, violet, nasturtium, berry petals, oregon grape, mallow, etc.

  • Shitake mushrooms – contain essential fatty acids and antioxidants to support a healthy immune system.

  • Barley – Loaded with niacin, fiber and iron and is important for healthy blood sugar.

  • Pumpkin – So rich in fiber and vitamins; helps reduce appetite by filling the stomach with indigestible fibers.

  • Kale – Rich in fiber and helps reduce calorie intake with less hunger. We like that!

  • Wheatgrass has every vitamin and mineral that we need with the exception of B12 and vitamin D. A couple of ounces to drink in the morning is good.
  • Organic kelp granules are a wonderful salt alternative with low sodium and have iodine in it.

Raw Veggie “Casserole”

Ingredients #1

3 lettuce leaves, shredded
1-2 zuccini, shredded in Food Processor
1-2 carrots, shredded in Food Processor
Handful of alfalfa sprouts
Handful cauliflower, in small bite sized pieces
˝ red bell pepper, sliced/diced
(Handful of chopped red cabbage)

Directions

Put all of above ingredients in a large salad bowl and mix together.

Ingredients #2

2 tomatoes
1 stalk celery
2 carrots
Juice of one lemon

Directions

Blend the above 4 ingredients in a blender…

Then add soaked sesame seeds, sunflower seeds, pumpkin seeds, flax seeds, almonds, or avocado to the desired thickness and consistency.  Adding extra carrots without the seeds/avocado thickens it into a non fat version.  Pour this mixture over the salad and mix thoroughly.

Raw Food Diet Cooking Methods

People who follow the raw food diet use particular techniques to prepare foods. These include sprouting seeds, grains and beans, soaking nuts and dried fruits, and juicing fruits and vegetables.

The only cooking that is allowed is via a dehydrator. This piece of equipment blows hot air through the food but never reaches a temperature higher than 116°F.

Do you have to follow the regimen that strictly? Of course not. But it’s certainly worth it to incorporate some of these techniques and ideas into your raw food diet.

Benefits of the Raw Food Diet

A raw food diet means consuming food in its natural, unprocessed form. You probably remember hearing not to peel carrots or potatoes too deeply, because most of the nutrients and values are just under the surface. If you cook vegetables just to the al dente (or medium) stage, they will have more calories, yes, but they will have more nutritional value than if you cooked them to a well-done stage.

Keep in mind that you do not have to incorporate a full 100% raw food diet forever!
